RAINBOW COLORED DRINKS

Rotating your vegetables in your morning BLENDED GREEN DRINKS is a very healthy idea. There is significant literature in the nutritional journals to support eating a wide range of different vegetables.

There are many vegetables to choose from, some are lower in sugar content, some are higher in sugar content, and some just don’t taste good in a blended drink.

Low versus high sugar content

Vegetables with high fiber content are overall less in sugar content. When you blend instead of juicing you keep a vital component of the vegetable in the drink… FIBER! What is fiber? Well, simply put its wood, methyl-cellulose. Fiber is a carbohydrate but fiber does not increase blood sugar because it is not broken down by the body. It simply passes through your body and out the other end.

The darker the color of the vegetable is the higher the fiber content it contains. Carrots, Collard greens, Swiss chard, Spinach, Kale, Bok Choy, Napa Cabbage, Avocados and even Sweet Potatoes are among the highest-fiber veggies. Many of these healthy good tasting vegetable, like carrots and sweet potatoes, add a touch of sweetness and usually overcomes the comments we get about the Blended Green Drink tasting too much like “mowed grass”.

Even adding selected fruits (if you like the blended drink a bit sweeter) like apples and pears, which contain a lot of fiber, really add a touch of sweetness. Adding ½ apples or ½ pear to your blended drink also overcomes the comments we get about the Blended Green Drink tasting too much like “mowed grass”.

Adding a dab of honey will also sweeten a blended drink nicely. Although, be judicious on the amount of honey as a little goes a long way.

For those who comment that the Blended Drink is too mealy or fibrous, adding ¼ avocado adds smoothness to the texture very nicely.

Vegetables which do not taste good in a Blended Drink

Vegetables which do not taste good in a blended drink are the cruciferous vegetables like broccoli, regular cabbage and asparagus. This list does not include the cruciferous vegetables like Bok Choy and Napa Cabbage which have little after taste and are very good in your Blended Drink.

• 1 baby bok choy
• 1 tbsp raw honey
